Savory Spaghetti and Meatballs

Serves 4 people

Ingredients:
  • 2lb beef stew meat (cut in chunks)
  • ¼ cup all-purpose flour
  • 4 tbsp olive oil
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups beef broth
  • 1lb baby yellow potatoes (halved)
  • 5 carrots (sliced)
  • 1 stalk celery (sliced)
  • ½ cup frozen peas
  • 1 cup Blood of Tyrants (of any red wine)
  • 2 tbsp red wine vinegar
  • 2 bay leaves
  • 1 tbsp paprika
  • Salt and pepper
Directions:
  1. Toss stew meat in flour, salt, and pepper.
  2. In a large pot, heat 4 tbsp olive oil. Add in stew meat and cook until browned on all sides. Remove meat from pot.
  3. Add wine and vinegar to pot and heat to simmer. Add in stew meat, broth, garlic, onions, and bay leaves, then bring to boil.
  4. Once boiling, reduce heat to a simmer. Cover and let simmer until stew meat is tender, about 2 hours.
  5. Add all vegetables and continue to simmer until potatoes are tender, about 30 minutes.
  6. Add seasonings to taste.
  7. Serve with toasted French rolls or sourdough bread and a bottle of Blood of Tyrants. Enjoy!
